Speaker - "Making Modern Meals, How Americans Cook Today" with Amy Trubek

What is the future of American cooking? Who should be at the table for this discussion? In Making Modern Meals: How Americans Cook Today, Amy Trubek helps set up such a conversation by exploring a long term social transformation to domestic meal preparation - we don't have to cook and we are not obliged to cook at home and still feed ourselves and others. Cooking is a chore, it is an occupation, it is an art, a craft and it is for our health. Share a conversation with the author about what this means - for individuals, for families and for our culture.  Books will be available for sale at the event at a discounted price.

 

Amy Trubek, PhD is trained as a cultural anthropologist and chef. She is the Faculty Director for the Food Systems Graduate Program and an Associate Professor in the Department of Nutrition and Food Sciences at the University of Vermont.  She teaches courses in the contemporary food system, food and culture, qualitative research methods, and food history.  Her research interests include the history of the culinary profession, globalization of the food supply, the relationship between taste and place, and cooking as a cultural practice.

Injera 101 - Make Your Own Ethiopian Bread

Alganesh Michael has been selling out her Ethiopian classes and pop-up events at RCK.  The number one request from guests is the desire to learn how to make the unique, spongy, sourdough flatbread, Injera.  Injera is a staple in Eritrea (Alganesh's homecountry) and in Ethiopia. In this class, Alganesh will explain the process of making the bread and participants will have the opportunity to mix and cook the bread themselves. At the end of class, everyone will sit down to an Ethiopian feast complete with the Injera they have created, salad, 2 veggie sauces, and one meat sauce.  You will also have a chance to experience the culture as we eat together in the traditional way, using our hands.

 

Bio: Alganesh Micheal lives in South Burlington with her husband and two daughters.  She is originally from the tiny county of Eritrea, nestled next to Ethiopia.  She is a former nurse turned homemaker for the last 16 years.  Although not a chef by trade, she loves to cook and entertain family and friends.  She has been collaborating with several local restaurants, including Eritrean/Ethiopian pop-up events at Arts Riot, Big Picture Theater and Tandem.  She also teaches classes and caters for private events.  She prides herself on cooking and serving food in the traditional way with authentic spices and served on a large, family-style platter.

Cooking Class for Children with Special Needs

Children ages 6 and up with identifiable special needs (medical, physical, learning) are able to join us for 1.5 hour long cooking class. The purpose of this class is for children to learn the life-skills of cooking in a quiet and supportive environment. They will chop, measure, mix, and cook some creative dish. Authentic Ethiopian right in the heart of downtown Richmond!?! Can it be?

Alganesh Michael is from the small country of Eritrea, nestled in next to Ethiopia.  She loves sharing the food and culture of her native country.  Come enjoy her wonderful flavorful food and celebrate a night out with friends! 

There will be 3 seatings: 5pm, 6:30pm and 8pm.  Advance reservations are required. 

UPDATE: There is 1 seat left for the 6:30pm seating and we have opened an 8pm seating as well!  If you booked tickets for an earlier seating and would like to move to the later seating, please contact support on your ticket receipt.

 

Menu:

  • Yesiga Wet (Spicy Beef) - Beef braised in spicy berbere*, onion, tomatoes, garlic, ginger and clarified butter 

 

  • Yemesser Alicha (Curry Lentil) - Split orange lentils cooked with onion, garlic, tomatoes and curry seasonings (mild spice)

 

  • Gomen - (Chopped Collard Greens) - Collard Greens slow cooked with red onion celery, fresh tomatoes, garlic, ginger and jalapeño ( mild spice) 

 

  • Inguday Wet ( Spicy Mushroom) - Mushroom cooked with onion, tomatoes, spicy berbere*, garlic, ginger & herbs 

 

* Berbere - powder made from dried red hot pepper, garlic, ginger, shallot, and lots of Ethiopian seasonings. 

The above sauces are served with Injera bread, a unique staple food to both countries.  Dishes are presented family style with salad.
